In yakishimo-zukuri, the skin side is briefly seared over high heat, then immediately chilled. The skin turns fragrant, the fat and umami just beneath it come alive, and the flesh stays raw and delicately sweet — a signature way to enjoy madai, long called the "king of fish" in Japan.
